OMGee guys, it’s SUMMER! I feel like i’ve been waiting for this moment to arrive for forever. I have my three kiddos home with me, and we’re planning to make this the best summer yet! This was the first year my oldest was in school for a full day, and I missed that kid so much! I’m so thankful for these 2 months, and I don’t want to spoil any minute of it. Can you tell i’m a crazy parent. lol It’s hard because I’m starting to realize that it won’t be too much longer till my middle child is in school full time, and shortly after that our “baby” will be too. Excuse me while I grab the tissues. Ok, mom get it together. Enjoy this summer, geesh! lol
Our summer is jam packed with swim classes, fun pool time, parks, and practically every free event i can cram in between. So, with that being said… I need to plan easy dinners because I don’t have all the time in the world cooped up in my house like I did in the winter. That’s where my super easy Baked Pesto Chicken comes in handy. This dish is so easy, you’ll have it on the table in no time. Which is a perfect dinner on a nice sunny day if you ask me.
So, go to the pool, park, or movies because I’ve got you covered with my super simple Baked Pesto Chicken you can afford to play that extra 10 minutes your child is begging you to have. Enjoy!

In our house I usually have a standard chicken seasoning. I’ll have to make a future blog post of this, but for now I’ll just post it here. 1/2 tsp pepper, 3/4 tsp salt, 1 tsp garlic powder, and 1 tsp onion powder. Sprinkle this seasoning on both sides of your chicken breast. (Save the remaining seasoning in an airtight jar for later use.) Cook chicken on both sides, until cooked through. About 7 minutes on one side, and 3-4 on the other. Adjust higher time if chicken is thick. Spread 1 tablespoon of pesto on each chicken breast and top with 2 slices of tomato. Sprinkle salt and pepper to taste on tomatoes. I used a prepared pesto for convenience otherwise you could use my pesto recipe if you have the time.
Set oven to broil and top tomatoes with shredded 1/4 cup Mozzarella cheese. Transfer your oven safe dish to the oven and broil keeping your oven light on so cheese doesn’t burn. Broiling is a quick process, so don’t turn your back to the oven. This could take anywhere to 2-5 minutes.
Remove chicken once cheese is melted and nicely browned on top. Plate your dish and enjoy!

Baked Pesto Chicken
My Baked Pesto Chicken is a quick chicken dish topped with pesto, sliced tomatoes, and melted mozzarella and Parmesan cheese. I chose to make this dish in a cast iron, but any oven safe dish will do. Enjoy!
Ingredients
chicken seasoning
- 1/2 tsp pepper
- 3/4 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
Chicken Ingredients
- 4 boneless skinless chicken breast I usually take 2 chicken breasts and slice them in half so they're thinner
- 4 tbsp prepared pesto
- 2 tomatoes 4 slices each, or 1 large tomato 8 slices
- 1 cup mozzarella cheese
- sprinkle grated Parmesan cheese
- salt and pepper to taste
Instructions

Slice 2 chicken breasts in half to create 4 thin chicken breasts. Sprinkle the chicken breasts generously with the chicken seasoning on both sides.

Cook chicken breast in an oven proof dish until cooked through. About 7 minutes on one side, and 3-4 minutes on the other.

Prepare broiler on high after chicken cooks.

Spread 1 tablespoon of prepared pesto on the chicken breast.

Layer 2 tomato slices on top of the pesto

followed by 1/4 cup of shredded mozzarella cheese, and a sprinkle of grated Parmesan cheese.

Place your oven safe dish in the oven. Turn the oven light on, and continue watching your dish so it doesn't burn from the broiler. Broiling can take anywhere from 2-5 minutes.
