I love to entertain, and we have a lot of family that visits us multiple times of year. When they come, I go all out on every meal. It’s like thanksgiving all throughout the year. Breakfast is usually a hard meal to make. Usually I make a casserole, because I’m guaranteed the whole meal coming out piping hot and we’ll all have a warm dish together, which is very important to me that we all sit at the table together as a family.
I’ve seen a lot of different kinds of muffin tin breakfasts. So I’ve experimented in the kitchen and came up with these. It’s super simple ingredients, but gives you all the flavor of a breakfast of champions in one little cup. The bonus to this is that I can make up to 12 cups and they’ll all be warm when they come out of the oven for our family meal at the table.

Spray your muffin tin with cooking spray. Start frying your bacon. I cut min in half with and then fry. Have your little helpers roll out 12 pieces of toast. If you cook less than 12 leave a space in-between egg cups. Press each piece of toast with the rim of a glass. Take away the crust, leaving a circle.
Place all the circles in your muffin tin. Cross 2 pieces of bacon halves in each muffin tin.
Crack one egg on top of each slice of bacon. Sprinkle with salt and pepper to taste.
Cook egg muffins for 15 minutes for a runny egg, and 20-25 minutes for a hard egg.
Enjoy your breakfast with a nice cup of Joe and fruit.

Easy Bacon-Egg Cups
These Bacon-Egg cups are my go to breakfast for a crowd. Quickly whip up the best parts of breakfast: eggs, bacon, and toast for the whole family in less than 30 min!
Ingredients
- 12 slices bread
- 6 slices bacon cut in half
- 12 eggs
- salt and pepper
Instructions

Preheat oven to 375 degrees

Cut 6 pieces of bacon in half and fry bacon till its not completely done and is still bendable; set aside.

spray muffin tin with cooking spray.

With a rolling pin, gently roll 12 slices of bread so it spreads out a bit.

Press the rim of a glass on the bread and take away the crust, leaving a circle.

Place circles in all the muffin tins. If making 6 muffins leave a space in-between each muffin. Spray bread with cooking spray.

Cross two bacon halves and place on top of bread.

Crack egg on top of bacon.

Sprinkle with salt and pepper to taste.

Place egg cups in a preheated oven. Cook for 15 minutes. If still wobbly set inside for 2 minutes more, watching to make sure they don't over cook. For a hard egg cook for 25 minutes.
