My oldest joined the swim team this year, which means early morning practices for him, but I’m not complaining. Every practice he improves a little bit, which ultimitly results in a faster time at the meet so in the voice of Dory I say “Just keep swimmin. Just keep swimmin.” While I’m sitting in the heat, watching my son swim I can’t help but think about these amazing super Easy Frozen Yogurt Breakfast Bars that I made this week. They’re the perfect breakfast, snack, or dessert to grab when you’re in a pinch for time.
Earlier this week I took the kids to our favorite farm again (Great Country Farms) after mining for gold, bouncing on their GIANT bounce pillow, and countless role playing games of American Ninja Warrior, Captain Blackbeard and his amazing pirates, Aviator, and combine harvester my kids finally didn’t fight me on the idea of heading to the tractor to pick fresh black raspberries. My original plan was to wake up the next morning and place the blackberries on top of warm steel cut oats, but it was crazy hot that day so the only thing on my mind was something cold! I had just gotten a granola bar pan from a pampered chef party and decided Yogurt bars would be the perfect snack/breakfast to make.

You can buy this pan from your pampered chef consultant or you could make these in a 9×13 inch Pyrex dish and cut with a knife.
I always have Plain Greek Yogurt in my refrigerator; I use it for more than just a healthy breakfast. You can use Greek Yogurt as a replacement for sour cream, creamy pasta sauces and soups, baking, and as a base for your own flavored yogurts. My youngest son enjoys plain greek yogurt with honey mixed into it. So good! For this recipe I make my own vanilla yogurt, but you could easily adjust it to your favorite flavor of yogurt by mixing in honey, or fresh berries.
Once you fill your mold with the yogurt, simply place the fresh berries on top and granola. I used store bought granola, but if you have a homemade version you could use that too. The top row I experimented with a lemon flavored yogurt topped with berries and lemon zest. So yummy! Can’t wait to hear what flavor combination you come up with. π

Easy Frozen Yogurt Breakfast Bars
My super Easy Frozen Yogurt Breakfast Bars only have a few simple ingredients, that create a wonderful healthy breakfast to start your morning off right. They are so good you'll want them for breakfast, snack, or dessert!
Ingredients
- 2 cups plain greek yogurt
- 2 tbsp maple syrup
- 1 1/2 tsp vanilla extract
- 1 cup fresh berries I used black raspberries
- 1/4 cup granola I used store bought, but you could use homemade
Instructions

In a medium bowl, mix together the first 3 ingredients.

Pour yogurt mixture into your granola bar pan. If you don't have this pan you can place parchment paper in a 9x13 inch pan and pour the yogurt mixture evenly in the pan.

Sprinkle the yogurt with berries, followed by granola.

Freeze for 2 hours, or until completely frozen.

Remove from freezer, and pop out of pan. If using a 9x13 inch pan pull up on parchment paper and cut into rectangles with a sharp knife.

serve immediately and enjoy, or refreeze up to 2 weeks.

I am 100% going to try this recipe! I use Greek yogurt for everything lol and Greek yogurt fro-yo is my favorite. I use Greek yogurt in a lot of recipes and the kids love it too.
