I’m pretty picky when it comes to shopping for food. I plan my menus out over the weekend, usually buy ingredients for 3 dinners, and make sure one dinner is big enough to yield lots of left-overs. When planning out my meals, I always try and make sure the ingredients will stretch between the three planned meals, that way I get use out of everything I buy.
Last week I needed pecans for a family-favorite desert recipe (coming soon!). I rarely purchase nuts at the grocery store (they never fill me up as a snack), so I figured it would be a waist to buy them in my house. I read that they spoil after a few months, and I knew I would never eat them in time before that happened. So, I decided I had to come up with another recipe that called for pecans.
Thankfully I had bought a fresh basil plant the month before, because it’s what gave me the idea to add the pecans to a fresh pesto. To be completely honest, I didn’t know how it would turn out. I figured there must be a reason why Italians use pine nuts instead of any other nut. I added all the ingredients to the food processor, said a silent prayer, and let my daughter slice everything to pieces. We each took a taste test and, to my surprise, my daughter did not turn up her nose! I closed my eyes and took in all the creamy nuttiness the pesto had to offer. It was so delicious and honestly the only way I’m going to make pesto from here on out.

We enjoyed our Pesto by cooking a package of Tortellini pasta with sliced chicken breast, and Shredded fresh Parmesan cheese. Enjoy!

Basil Pecan Pesto
Basil Pecan pesto is a rich, creamy nutty sauce. The pecans pair wonderfully with Basil, garlic, and your choice of Romano or Parmesan cheese.
- 2 cups fresh basil
- 1 cup pecans
- 4 cloves garlic, minced
- 4 oz fresh parmesan cheese, cubed
- 1/2 cup olive oil
- 1/2 tsp kosher salt
- pinch pepper
Place all ingredients in the bowl of a food processor. Process ingredients until combined and slightly creamy looking but still has texture. Use as a sauce, or dip.
