I used spring vegetables to dress my salad or you could switch it up as the season progresses to get the freshest ingredients.
I have been on a health kick lately. I think since summer is finally here, i’m realizing how many of my friends I’ll be seeing at the pool this year! In all serious though, dieting hasn’t been that bad. I didn’t dive into an extreme diet. I plan to vacation locally this year, and probably have an abundance of family visitors so sticking to a plan is almost impossible…Oh and wine, cant forget my love for wine too!
Recently I’ve been following the South Beach rules during the week. Again, i’m not going into a diet full blown, I’m allowing mistakes because if I restrict myself completely I’ll end up resenting the diet and I think that’s how I would ultimately end up failing. So how am I doing this diet? Monday- Friday I cut out carbs completely. I pretty much only eat the foods from the Phase 1 approved list of the South Beach diet, with one exception. We eat out 1 day a week during the weekend. This is either with the family, or a date night with my husband. During this time I don’t restrict myself. This doesn’t mean Nachos, or countless carb overload foods. I did that once and felt sick to my stomach afterwards! I’m trying to teach myself self control without going crazy. On Sunday I usually start to prepare for Monday again, and enjoy a nice glass of red wine on my deck or porch while I write out my menu for week ahead.
I’m not sure what results I’m going to get from this diet, I might not even lose anything because of the way I’m following it. What I hope to get from it is to learn self control. Even though carbohydrate filled meal tastes delicious, I end up leaving a restaurant feeling miserable and can hardly sleep afterwards. I never felt like that until I started this diet. I’ve been happy with my results so far, and am excited to see how far I can make it with this diet.

Have you ever roasted garlic before? It’s so easy to do and the perfect flavor for my Garden Salad with a Creamy Garlic Dressing. The garlic transforms into this mild sweet flavor that you can actually just scoop out and spread on toast. To roast garlic simply cut the top off of a garlic bulb. Brush the open top with a little olive oil. For added flavor consider laying a sprig of fresh thyme to the bulb. Close the garlic in the foil and Roast on 400 degrees for 40 min.
When roasting garlic, I usually do this when I’m already roasting vegetables. This way I get more use out of my oven. Simply add the roasted garlic thats wrapped in foil to your vegetables and remove when cooked through.
Once Garlic is finished cooking set aside till it is cool to touch. Scoop out garlic from the bulb and add to a food processor, along with all the other ingredients to create your dressing. If you’re looking for a mild taste just use the roasted garlic. Taste, and see if you want to add 1 raw garlic clove to spice it up. Only use 1. The garlic is so strong, and using 2 will have you smelling like garlic for days. lol

Garden Salad with a Creamy Garlic Dressing
The roasted garlic in my Garden Salad with a Creamy Garlic Dressing has a mild sweet taste. Don't worry we added a raw piece of garlic to give it that spice that you're used to; but at the same time won’t scare the Vampires away.
- 2 cups mixed greens salad
- 1/2 cup 2 inch sliced steamed asparagus spears
- 1/4 cup feta
- 1/2 cup sliced, grilled chicken
- 1/2 cup sliced red, yellow, or green bell pepepr
- 1/4 cup sliced tomato
Creamy Garlic Dressing
- 1 sprig of thyme optional ingredient for added flavor
- 1 bulb of roasted garlic
- 3 tbsp full fat greek yogurt
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1/4 tsp salt and pepper
- 1/4 cup olive oil
- 1 clove raw garlic taste dressing before adding, to see if you want the extra spice
Preheat oven to 400 degrees
Cut top off bulb of garlic, brush on olive oil (You can add a sprig of thyme over open garlic for more flavor if you'd like) wrap garlic in foil to seal in the flavor.
Roast in the oven for 40 minutes.
Remove from oven, and rest till cool to touch.
Scoop out garlic in the food processor and add next 4 ingredients. Pulse till everything is chopped through, slowly add in olive oil while continuously spinning the blade of the food processor until it emulsifies.
Taste dressing, and decide if you want to add 1 raw garlic clove for added spiciness.
Place two cups mixed green salad in the bottom of a large bowl. You can either place dressing in a cup on the side, or toss the salad in dressing.
In a circle, place little sections of Chicken, Bell pepper, *Asparagus, feta, and tomatoes in the middle.
*To steam asparagus simply fill a pot 1/4 of the way full on the counter. Place a steamer basket in the pot and add the asparagus spears. Put a lid on the asparagus and steam till a bright green color. Remove from the steamer and immediately add to an ice bath to stop the cooking process.
