Baked Pesto Chicken

My Baked Pesto Chicken is a quick chicken dish topped with pesto, sliced tomatoes, and melted mozzarella and Parmesan cheese. I chose to make this dish in a cast iron, but any oven safe dish will do. Enjoy!

chicken seasoning

  • 1/2 tsp pepper
  • 3/4 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder

Chicken Ingredients

  • 4 boneless skinless chicken breast I usually take 2 chicken breasts and slice them in half so they're thinner
  • 4 tbsp prepared pesto
  • 2 tomatoes 4 slices each, or 1 large tomato 8 slices
  • 1 cup mozzarella cheese
  • sprinkle grated Parmesan cheese
  • salt and pepper to taste


  1. Slice 2 chicken breasts in half to create 4 thin chicken breasts. Sprinkle the chicken breasts generously with the chicken seasoning on both sides.

  2. Cook chicken breast in an oven proof dish until cooked through. About 7 minutes on one side, and 3-4 minutes on the other.

  3. Prepare broiler on high after chicken cooks.

  4. Spread 1 tablespoon of prepared pesto on the chicken breast.

  5. Layer 2 tomato slices on top of the pesto

  6. followed by 1/4 cup of shredded mozzarella cheese, and a sprinkle of grated Parmesan cheese.

  7. Place your oven safe dish in the oven. Turn the oven light on, and continue watching your dish so it doesn't burn from the broiler. Broiling can take anywhere from 2-5 minutes.

  8. Remove chicken when cheese is melted and nicely browned.
